I started both my kids eating healthy as soon as they could chew solids. The sooner kids acquire a taste for veggies the better. As toddlers they actually fought over broccoli florets! Something I still love to do today is to puree carrots and other greens and add them to sauces, dips, baked goods – no one ever knows they’re in there. Organic jarred baby food prunes are fantastic to use in place of sugar when you want to sweeten lots of recipes up. Pureed carrots are amazing to sweeten up homemade tomato sauce. Try pureeing a 1/4 cup turnip greens, 1/4 cup collard greens and 1/4 cup kale into 2 cups of pureed spinach, add a little half-n-half, butter, garlic powder, onion powder and sea salt – it makes the most delicious creamed greens side dish, similar to creamed spinach.
